Cherry Pop Pie

Ingredients

8 cups fresh or frozen cherries

1/2 cup sugar

1 cup cherry flavored pop

3 tablespoons cornstarch (sifted)

1 tablespoon lemon zest

1 pie crust (blind baked/or store bought)

Instructions

Combine cherries, sugar, cherry pop, and cornstarch in a medium sized sauce pan.
Over medium heat bring ingredients to a simmer.  Allow to gently simmer until mixture has reduced by 1/4 and thickened. Stirring occasionally. This normally takes around 20 minutes. Allow filling to cool before pouring into prepared pie crust. Enjoy!
