Enchanted Forest Chocolate Cake

  • 1 1/2 cups all-purpose flour

  • 3/4 cup cocoa powder (unsweetened)

  • 1/2 tablespoon baking soda

  • 3/4 teaspoon baking powder

  • 3/4 teaspoons salt

  • 1 1/2 cups granulated sugar

  • 3/4 cups buttermilk

  • 2 eggs

  • 1/2 cup strongly brewed coffee

  • 1/2 cup Dukes Mayonnaise

Chocolate Buttercream Frosting 

  • 2 cup softened butter  

  • 1 cup unsweetened cocoa powder

  • 6 cups powdered sugar

  • 1/2 teaspoon kosher salt

  • splash of whole milk/heavy cream

Chocolate & Coffee Cake

Preheat oven to 350°. 

Line 3 6 inch cake pans with parchment paper and grease with butter/shortening.

In your mixer combine flour, cocoa, baking soda, baking powder. Turn mixer on low and allow ingredients to evenly distribute. 

Add sugar, eggs, buttermilk, coffee, and mayonnaise to dry ingredients. Mix on a medium speed for approximately 2 minutes stopping to scrape the bottom and side midway through. Mixture should be smooth and lump free. 

Pour batter into prepared pan and bake for approximately 30 minutes or until a toothpick inserted in the center pulls out cleanly. 

Allow cakes to cool 30 minutes before releasing from pans. Allow to cool an additional 30 minutes (minimum) before icing. 

Chocolate Buttercream Icing

Using your stand mixer, mix together butter and cocoa powder until evenly combined. Add in sugar one cup at a time and mix until smooth. Splash in milk until desired consistency is achieved!
