Matcha Frog Shortbread Cookies

Ingredients-
1 cup butter flavored shortening - room temp

1 cup powdered sugar 

1.5 cup All Purpose Flour (GF or wheat)

1 tbs Matcha Powder - sifted 

Vegan Chocolate chips - for garnish

(Please see below for substitutions)

Method-
In a mixing bowl combine the shortening and powdered sugar using a spatula. Mix until smooth. Add in the flour 1/2 a cup at a time. Mix until fully incorporated each time. Add the matcha powder and stir until dough has an even green tone throughout. Cover dough and allow to chill in fridge for a minimum of 30 minutes. 

Preheat oven to 325°.

Line a baking sheet with parchment paper. Remove dough from fridge. Use an ice cream scoop to get even dough amounts. Create an oval shape by first rolling the dough in your hands and finish shaping on parchment paper. Once an oval has been achieved use a skewer to create the mouth indention. Use a 1 tsp measuring spoon to scoop out two equally sized round balls for the eyes. Place snuggly above the oval shape. Repeat process until all dough is used. Recipe makes roughly 8 frog shaped shortbreads. 

Bake 10 - 12 minutes or until dough is just set. Allow to cool 10 minutes before transferring off of baking sheet. Enjoy! 

*Please note. 

  • Equal amounts of Plant based Butter or Dairy Butter may be used in place of Shortening.

  • Granulated sugar may be used in place of powdered sugar if in a pinch. 

  • Regular Chocolate works just fine, too! 

  • I recommend mixing this shortening recipe by hand, but it can be done in a mixer if needed!
