Peach & Basil Summer Tart

 Ingredients

Thawed puff pastry

3+ Ripe Peaches

Goat cheese

Fresh Basil

Honey 

Method:

Half and remove pits from peaches. Cut each half into thin wedges. Set aside. Roll out puff pastry into desired shape. Mine was a 12”x12” square. Place the pastry on a parchment paper lined baking sheet. Using a knife make a score around the perimeter (approximately 1 inch from the outside edge of the dough) to create a “frame”. Inside the frame use a fork to “prick” the dough. This will help the inside not to rise like the outside border. Bake at 375° for approximately 10 minutes or until dough has become a nice golden brown color. Remove from oven and allow to rest 5 minutes. Using any pattern you’d like lay the peaches inside the “frame” of the puff pastry. Top with crumbled goat cheese & basil. Drizzle liberally with honey and enjoy!
