Molasses Pumpkin Pie

Ingredients:

2 cups pumpkin purée (homemade or canned)

1/4 cup molasses

2 tbs maple syrup

1 cup brown sugar

1 cup coconut milk

3 large eggs

1 tbs cornstarch

1 1/2 tsp cinnamon

1/4 tsp nutmeg

1 pinch ground cloves

1 pinch salt

Double batch of your favorite pie crust recipe or store bought if you’re in a pinch! You will only need a single batch if making a traditional round pie. 

Method:

Preheat oven to 350°. In a mixing bowl combine the pumpkin, molasses, maple syrup and brown sugar until smooth. Add in the coconut milk and eggs. Mix well until evenly incorporated. Next add in the remaining ingredients. Make sure the cornstarch is free of lumps before adding. Using your mixer, mix the filling on medium speed for approximately 1 minute. It should be smooth and slightly fluffier. 

Add the filling into your prepared pie crust. Only fill the pie crust 2/3 of the way full. Bake for approximately 50 minutes or until middle is set, but the pie still has a slight “jiggle”. Allow to cool completely on a cooling rack. Enjoy!
