Apple & Moonshine Hand Pies

Ingredients:

3 Granny Smith apples (finely diced)

1/3 cup brown sugar

2 tbs moonshine

1/2 tsp cinnamon

1 -2 puff pastry sheets (thawed)

2 eggs (beaten)

Turbinado Sugar

Method:

Add your diced apples, brown sugar, and moonshine to a saucepan. Bring to a simmer and allow to cook over medium - medium low heat for approximately 20 minutes or until apples have softened and a thick sauce has formed. Remove from heat and allow to cool.

Preheat oven to 400°.

Roll your puff pastry out on a floured surface. Use a 4 inch cookie cutter to cut out approximately 10 rounds.

Fill the middle of each round with approximately a tsp of filling. Apply beaten egg (egg wash) lightly around the edges of the round. Fold the round in half and seal together with a fork or by pinching with your fingers. Make three small slits in the top of the pie. Repeat until filling is gone. Brush the tops of each pie with egg wash and sprinkle with turbinado sugar. Place on a parchment paper lined baking sheet. Bake for approximately 12-15 minutes or until pastry has puffed and become golden. Allow to cool before enjoying!
