Watermelon Mocktail

Ingredients

1/4 cup honey

1/4 cup loosely packed lemon balm sprigs

Juice of 1 lemon

5 cups cubed watermelon (seedless)

1 cup coconut water

Lemon and watermelon wedges for garnish

Method

In a small sauce pan combine honey, lemon juice, and lemon balm. Bring to a gentle boil, stir, and remove from heat. 

In a mixer/food processor blend up the watermelon cubes. Pour purée through a fine mesh strainer and reserve the juice. 

Remove lemon balm sprigs from honey. 

Combine 2 cups reserved watermelon juice, coconut water, and honey mixture. Stir to combine and serve over ice. Garnish with watermelon and lemon.
